Brown Sugar Pumpkin Bars with Goat Milk

Ingredients for Bars

  • 1 cup butter, melted
  • 2/3 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup pumpkin puree
  • 1 1/2 cups flour
  • 1 tsp cinnamon
  • 1/4 tsp baking soda
  • pinch of salt

Ingredients for Frosting

  • 1 cup butter, softened
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 2 cups powdered sugar
  • 1 tbsp Summerhill Goat Milk

How to Make It

-Preheat oven to 350 degrees

-Mix wet ingredients in a small bowl (butter, egg, vanilla, pumpkin, and brown sugar)

-Mix dry ingredients in a medium bowl (flour, cinnamon, baking soda, and salt)

-Add wet ingredients to dry ingredients, and whisk together just until incorporated

-Line an 8×8 pan with parchment paper and spray with nonstick spray

-Place in oven for 25-30 min, or until toothpick comes out clean

Frosting

-Blend the butter and brown sugar together until creamy

-Add in the powdered sugar, cinnamon, and goat milk and blend until light and fluffy, add more milk if needed.

-Place on top of pumpkin bars once completely cooled

-Enjoy!!
