Ingredients
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 2 tsp ginger
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp salt
- 1 tsp vanilla
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1/8 cup molasses
Icing
- 1 cup powdered sugar
- 2 Tbsp Summerhill Goat Milk
- 1 tsp vanilla
How to Make It
1. Preheat the oven to 350°F.
2. Combine flour, baking soda, salt, and spices in a medium mixing bowl.
3. In a stand mixer or hand held, mix the butter and sugars together until it becomes light and fluffy. Add in the egg and vanilla and beat until it is combined.
4. Add in the molasses and beat again until fully combined.
5. Add in your dry ingredients and beat until fully combined.
6. Take a small ice cream scoop and scoop out your cookie dough and place on a cookie sheet. (you can press down on the top of the cookie with your palms if you want the cookies to be a little more flat out of the oven.)
7. Bake for about 8-9 minutes in the oven, remove from the oven for a few minutes before placing them on a cooling rack.
8.Once they are cool, mix together our icing ingredients into a small bowl.
9. Take your cookies and dip the top of each one into the icing and place them back on the cooling rack to let the icing drip over the sides of the cookies. ENJOY!
