Goat Milk Chocolate Ice Cream

Sweeten up your summer girls’ night with this recipe for pink thumbprint cookies made with Summerhill Goat Milk!  

Ingredients 

Cookies:
  • 1 cup softened butter
  • 1/2 cup granulated sugar
  • 2 cups flour
  • 1/2 tsp. salt
  • 1/4 cup powdered sugar for sprinkling on top of cookies

Icing:

  • 1 1/4 cup powdered sugar
  • 1 Tbsp lemon juice
  • 2 Tbsp Summerhill Goat Milk
  • Pink food dye

How to Make It

For the cookies:

-Blend together the butter and sugar on medium high until light and fluffy.

-Add in the flour and salt and mix until combined

-Roll your dough into a ball and wrap in saran wrap and place in the fridge for one hour.

-Preheat the oven to 325 degrees.

-Roll balls into about 1 Tbsp in size, and put an indent in the top of your cookie with your thumb.

-Place in the oven for 10 minutes.

-Let cookies cool for 5-10 minutes and press with your thumb again to press down the center of the cookie.

-Take your powdered sugar and sprinkle it on top of the cookies.

For the Icing:

-Place your powdered sugar, lemon juice, and 1 Tbsp. of goat milk and start to mix your cing. Add your next Tbsp of goat milk and continue to stir (You can add more or less depending on how thick you like your icing).

-Add in a drop or two of your pink food dye and mix again.

-Pour icing into all the centers of the cookies. 

-ENJOY!
