Peach Cobbler

Sweet, juicy peaches bake beneath a soft, golden cobbler topping made with creamy Summerhill Goat Milk. It is simple, comforting, and perfect served warm with a scoop of ice cream. Peaches are a summertime favorite, but this recipe also works beautifully with berries, plums, nectarines, apples, or a combination of whatever fruit is in season.

Ingredients

  • 4 tablespoons unsalted butter
  • 4 cups peeled and sliced peaches
  • ¾ cup all-purpose flour
  • ½ cup granulated sugar
  • 1½ teaspoons baking powder
  • ¾ teaspoon kosher salt
  • ¾ teaspoon ground cinnamon
  • ⅔ cup Summerhill Goat Milk
  • 1 teaspoon vanilla extract

How to Make It

  1. Preheat the oven to 350°F. Place the butter in an 8-by-8-inch baking dish and set it in the oven for about 4 to 6 minutes, just until melted. Carefully remove the dish and set it aside.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Pour in the Summerhill Goat Milk and vanilla. Stir until the batter is smooth and no dry pockets remain.
  4. Gently pour the batter over the melted butter. Do not mix the butter into the batter.
  5. Arrange the sliced peaches evenly over the top. As the cobbler bakes, the batter will rise around the fruit and create a soft, golden topping.
  6. Bake for 45 to 55 minutes, or until the center is set and the top is lightly golden.
  7. Allow the cobbler to cool for about 15 minutes before serving. Enjoy it warm on its own or topped with vanilla ice cream.

Fruit Options

Use approximately 4 cups of prepared fruit. Try:

Peaches, nectarines, plums, blueberries, blackberries, strawberries, apples, pears, or mixed berries. For firmer fruits such as apples or pears, slice them thinly so they soften fully while baking.
